I believe that this is a subjective question. Personally, i want a pair of the Cobbler Union double monks in museum congac, but not sure what your price range is. They are absolutely gorgeous in person and with a coat of polish the color pattern becomes slightly more muted which i love. Im wearing a pair of their museum congac boots right now (Renoir). I think they are the best value in shoes i have ever experienced but again i dont know what your price range really is. I currently own 4 pairs and would own many more if my wallet allowed LOL! I have the monks and a pair of suede wholecuts on my radar right now.

Assuming looking for the right mix of longevity to price. My DSW Ashton Gray double monks are about 4 years old (maybe even older) see the rotation usually weekly and are holding up well. I don’t walk to work in them or anything but not bad for under 100. I think with coupons they were 79. Thought I’d try out the style then buy nicer ones. Well they’ve held up well.
Those are BEAUTIFUL. I love them. And you are right the question is very subjective. I love them ones you suggested but for me, everyday use back and forth to work commuting on the subway they are too expensive. I guess I am looking for shoes under $200. But the ones you suggested will be on my radar for a good pair of formal shoes.
Obviously it's heavily size-dependent of course, but shoebank.com has 10D (most common men's size apparently) St. John's double monks for $199. They have them in my size too which is far less common, so chances are they have them in most reasonable sizes.
@neminat those are gorgeous but they sadly won't work with my non-D width it seems.semper sadface.
I got a pair of Meermin that I love. They took a little longer than my AE's to break in, but they are wonderful now. Goodyear Welted at under $200. Shipping is $15, unless you're in NY.

I suggest you consider checking out Herring Shoes. They have a large selection starting at about $140 and going up to over $600--several different brands. Many are Goodyear welted--even the ones for $140 (but they are made in India with corrected/polished leather).
I love my Herring Philip II monk shoes--I got them on sale for about $330. You can get a nice pair of Loake double monk straps in calf leather for about $250 (unless you're in the US).

And my final suggestion for now is take a look at Nordstrom Rack online--they have quite a selection in the $100-$200 range by Mezlan, Magnanni, Gordon Rush, and Cole Hahn--okay, you're not getting the best shoes--but they look pretty sharp, are mostly leather, and the price is not too high.
